Grilled Chicken Spinach Salad w/ doTERRA Rosemary Essential Oil

Are you noticing a theme among my current recipes?  Yes, Rosemary Essential Oil!  I have it on hand and I love the taste – and the health benefits as well!  Today’s recipe was concocted in my head as I drove home after a morning massage session with a new client.  I wanted something healthy, something light and something QUICK (remember, I really don’t cook)!  And especially … something that I could make as just one serving with no leftovers.  The result:  an easy to prepare delicious Grilled Chicken Spinach Salad.  One of the nice things about this recipe is that, other than the dressing, there is no measuring involved!  Use as much or as little of each ingredient as your taste buds desire – there is no right or wrong way to do this.  Change out the spinach for another dark green tasty leaf lettuce.  Not a sharp cheddar cheese fan?  Use whatever your favorite is!  Swap out the mandarin oranges for kiwi slices (I just read a great article today about all the powerful health punches that kiwi delivers, too).  You get the idea, I am sure.  To get your creative juices flowing and your tummy growling for a serving, following is a list of the ingredients I used today.

GRILLED CHICKEN SPINACH SALAD:

  • Fresh leaf spinach (wash and pat dry) – I like to tear mine into smaller bite-sized pieces
  • mandarin orange slices
  • cooked chicken breast, cut into 1 inch slices (I grilled mine quickly on my Hamilton Beach countertop grill, but you can cook in a skillet over the stove with a dollop of extra virgin olive oil, too)
  • extra sharp cheddar cheese, cut into cubes
  • tomato, cut into bite-sized chunks
  • black olives
  • pine nuts

DRESSING:

  • 2 tablespoons poppyseed dressing
  • 1 drop doTERRA Rosemary Essential Oil

In the bowl you’ll be serving the salad in, layer the ingredients in the order listed (with the spinach on the bottom).  In a smaller mixing bowl, combine dressing and Rosemary EO.  Mix well.  Drizzle dressing over top of salad.  Dive in and enjoy!  When you are done, I hope you’ll come back and leave a comment on how you liked it!

BONUS RECIPE:  Chocolate Stuffed Raspberries

I just KNOW you noticed that yummy looking desert bowl to the left of the Salad in my photo above, don’t even try to pretend that you didn’t!  That bowl contains seven red raspberries, each one “stuffed” with two milk chocolate mini-chocolate chips.  DROOL!  It was the perfect end to this perfect lunch!
